The hot pot service was pretty good. There's a lot to choose from and you can split up and try different broths. The yellow fish broth was our favorite. The service was pretty quick for us but it wasn't very crowded. It feels somewhat private and the ambiance is clean and luxe. I think it is a bit expensive for what you get.

I have never been to Haidilao but have consumed a lot of hotpot, though typically AYCE, which this is not. That's fine, and it's in a convenient location in downtown, so some friends and I went on a Saturday with a reservation. The waiting area is nice and they have snacks everywhere! We definitely consumed quite a few of them while waiting, and about 10 min before our reservation time since we were all there we were seated. We were given aprons and touchscreens to order. There were 7 of us, and we were split into two groups with 4 and 3 to order separately. In my group we opted for the quadrant broth with tomato, tomyum, and the two spicy broths. We also ordered some meats, veggies, and fungus. As a heads up, the sauce bar also costs extra here, but it does have quite a few options and more snacks. We also did the noodle dance. Broth and food was quickly delivered, and it was super fun to have the robots bring us our food! Really organized. The workers also asked us for when we'd like our noodle dance, and we opted for a bit later in the meal. The dance itself was cute and short, not something that's needed but a fun addition. All the other items that were ordered tasted really good, the stand out being the honey pork. This place is very pricey, as a heads up. In general, I'd probably go to Bellevue for an AYCE place but I was definitely content with my meal, felt full without being overstuffed. Also don't forget to tell your waitress a secret saying for a cute gift! They only allow one per table here though rather than for every customer.

I've had Haidilao a handful of times already but it had been a while since my last visit so I was excited to try their $19.99 classic combo lunch special, which is only offered Mon-Fri until 5pm. This was my first time at the Bellevue location, and just based on this experience I would say that the Seattle location is much better in terms of service. This could also be a consequence of being seated in a room on the side rather than the main area but we only saw our server a few times and were neglected a bit. It took a long time to finally get our bill. The food itself was as expected: fresh meats and veggies, lots of sauce options, flavorful soups. Because we got the lunch special our choices were limited but I felt like it was, overall, a decent, typically-priced deal if you compare it to buying a set hotpot bowl like Boiling Point. In our set, we got the angus beef short plate, fresh egg noodles, sauce bar access, the combo platter, and a soft drink. We could have added more food to our order but it ended up being too much for us already. The slice of meat were very big, a good portion for one person in my opinion. Tasted great with the tomato broth and spicy pork bone broth. I think Haidilao has some of the best-tasting broths I've tried from a hotpot place. I wish they would give you more options for broth with the lunch special but they limit it to just a few choices. The combo platter had napa cabbage, yu choy, carrots, seafood mushrooms, vermicelli, tofu, tofu skin ribbons, 2 very thin slices of spam, 2 pieces of imitation crab, and 2 pieces of fishcake. The egg noodles were chewy and delicious, but next time I'd be tempted to try to make a quick dry-style noodle dish using the sauce bar instead of eating the noodles in the soup. The classic combo lunch special was fine but because the combo platter was all stuff I would not go out of my way to order normally, next time I might come for the $1.99 happy hour meats and just order the ingredients I like instead of getting the lunch special. The interior is very modern and clean, the sauce bar was mostly well-stocked, and there are things like free coffee, snacks, and ice cream. They also usually offer aprons and hair ties, unfortunately we were never offered either of these during our meal. My girlfriend was looking forward to using the special code words for the little treats and toys but our server said they didn't have any at the time. She was sad! You can make reservations and even put yourself on the waitlist online, very easy and convenient. Parking was nice because you can use the garage and get free validation at the end of your meal.
